carrot cake

today i made carrot cake for the potters to celebrate things: the completion of thousands of tiles (blue, turquoise, and white -well, white-ish) for the new Mosque in Istalif, the first kiln-load of pots with the traditional glaze called ishqor (made from the ash of a desert plant that grows up in Tashqorghan, it's amazing!) that, with the good help of Brad Ponack (TM's ceramics advisor), the potters made, and also the fact that Ustad Hunaryar, the head of the school, is going on Hajj any day now. reasons enough to eat cake, i reckon.
here is the recipe (vegan, easy, and tasty):
  • 3 Cups shredded Carrots
  • 1 1/4 Cup of Sugar
  • 2 Cups Flour
  • 1/2 Teaspoon of Salt
  • 2 Teaspoons of Baking Powder
  • 1/2 Teaspoon of Baking Soda
  • 2 Teaspoons of Cinnamon
  • 1/2 Cup of Orange Juice
  • 3/4 Cup of Canola Oil
  • 1 Cup of Raisins
  • 1 Cup of Chopped Walnuts
